Luscious Lemon Pudding Pie


           Many bakers will scoff at the thought of using a mix, and try to convince you that 'homemade is so much better, and so easy!' Not always the case. Many dishes taste so much better homemade, but easier? Not by a long shot. I love trying new recipes, but sometimes you just want some dessert, and you don't want to have to spend the entire day making it. Enter into the ring my Luscious Lemon Pudding Pie.



It's got three layers of lemony goodness, and the crust is made with lemon Oreos. I love lemon Oreos. I once ate half a package of them before a field hockey game, hoping the sugar rush would help me score a goal. It didn't, but that's more likely due to my lack of athletic ability. 

Let's get back to the pie.

It's perfect for a sunny summer day, when the birds are singing and all is right with the world.

Or a dreary, rainy Monday when you come home from a long day at work feeling dead inside. Pie works either way.

My secret? Pudding mix!

We begin with a lemon Oreo crust.


I ground up the Oreos in my food processor, but a plastic bag and a rolling pin will work just as well.
Add some melted butter, and voila! Instant cookie crust.


Next up is the filling. Half of the prepared pudding stays as is, and the other half is whipped with heavy cream to create an easy lemon mousse. 


Finally, top it with some sweetened whipped cream and Oreo crumbs. 


Easy lemon pie. Shortcuts never tasted this sweet.

Luscious Lemon Pudding Pie
Ingredients
    CRUST

  • 22 lemon Oreos
  • 1/4 cup melted butter
  • FILLING
  • 1 box Cook and Serve lemon pudding mix, prepared according to directions on the box
  • 1 1/4 cup heavy whipping cream
  • 2 tbs powdered sugar
  • WHIPPED CREAM
  • 3/4 cup heavy whipping cream
  • 2 tbs sugar
  • 1 tsp vanilla extract

  • Instructions
    1. Put the Oreos in a food processor and process until you have uniform crumbs, then add in the melted butter and process until combined. Alternately, crush the Oreos using a plastic bag and a rolling pin, adding the melted butter right into the bag. Press the mixture into a pie plate and set aside. 2. Prepare the pudding according to the directions on the box and let cool. Once the pudding has cooled, pour half of it into the pie crust. 3.Put the rest of the pudding in a large bowl and whip with 1 ¼ cups heavy cream and 2 tbs powdered sugar until the mixture is fluffy and mousse-like. Pour the mixture into the crust. 4. Whip the remaining heavy cream until soft peaks form, then add the sugar and vanilla and whip until stiff peaks form. Top the pie with the whipped cream and garnish with lemon Oreo crumbs. 5. Enjoy!Tips: 1.) Chill the bowl and beaters before whipping the cream for best results. 2.) I like to use a disposable aluminum pie plate to press the crust mixture into the pan. If you don’t have one, flattening the mixture with a measuring cup also works well.
